Selected recipes for typical Portuguese dishes, as well as some from the former colonies. Most of these were provided by Maria Emília Cunha, whose husband, Bill Silvert, maintains this site.
Olives
This isn't really a recipe, but a friend was asking about olives with a special buttery taste and after consulting with my wife I want to point out that you can store olives in olive oil instead of brine and they taste quite different. They do indeed have a buttery taste, and you can flavour them in various ways. One is to add garlic and oregano or some other herb. The Spanish often make a paste of garlic mashed with paprika which they add to the olive oil. Or you can invent your own! - Bill

These are just a few recipes that Bill Silvert stole from his wife, Maria Emília Cunha. She is Portuguese but grew up in the colonies, so these are a mixture of Portuguese, Angolan, Goan and other recipes.
